Messing around with Chocolate Icecream

They say cooking an item takes practice, so might as well practice some chocolate ice cream.

The first recipe
Stealing some ideas from here and here.

2 cups cream
1 cup whole milk
7 (size 7) egg yolks
3/4 cup sugar
1/4 cup cocoa powder
56g cacao nibs
1 vanilla pod
1/4tsp salt

The process
Heat up cream and milk until just about boiling
Dump in nibs and leave it to steep until cold
Reheat milk to almost boiling
Mix cocoa powder and sugar until smooth
Mix egg yolks into sugar/cocoa until smooth - I added ~2Tbs of cream to let it down a little - mixed until sugar is dissolved.
Once the milk is hot, I tempered the eggs, and then mixed the lot and put the lot back on the stove
Heated until 77deg C (170F) or until the back of spoon deal.  Salted and vanilla.
Cooled.

Tastes like extreme hot chocolate.

Will put through the ice cream maker tomorrow and see how this goes.  Will likely mix it with chocolate chips - just to make sure the chocolate is extreme.
